Chain restaurants and retail stores share a brand and central management, and usually have standardized business methods and practices. These projects present themselves with many design obstacles for the MEP design teams. Many of the locations are in existing buildings that have had several renovations, drawings and existing conditions are not readily available. Encon will survey and coordinate these sites with landlord utilities, mall/complex criteria and site specific conditions.
Encon provided MEP and FP engineering services for full size kitchens including exhaust hoods, kitchen equipment, HVAC, plumbing and power for these projects.

The atmosphere at Five Guys is designed to keep customers focused on the food. The decor is basic: white and red tile walls with wooden tables and chairs. Articles written about Five Guys or quotes of what others have said about the restaurant are the only decorations you will find.
Restaurants range from 2500-4500 square feet
Encon provided MEP and FP services to multiple locations from Florida to Connecticut. Unique challenges came into play with different jurisdictions requiring variations of grease collection. This is unique because every project has different size grease interceptors from 50 gallon under counter units to (4) 1600 tank buried outside of space. Kitchen exhaust was also a challenge if the restaurant was located within a multistory building.

Cafeteria Style Restaurants
Cafeterias and restaurants are important in university campuses. The largest Cafeteria of the university designed for use by staff, students and visitors is generally the most visited component of a university. It is also a place where students and faculty can take their visitors for a brief coffee break or a lunch hour visit. College cafeterias feature daily entrée specials, sandwiches and wraps, grilled favorites, pizza, gourmet salads and sandwiches to go, fresh fruit, fresh baked goods, parfaits, fruit cups, chips and snacks. Specialty coffee, espresso and bottled beverages are also available.
These projects dealt with the logistics of school being in session, college guidelines, and students. Bobby Van's Steakhouse boasts a masculine decor of wood panels, leather booths, and a handsome bar. Bobby Van's Steakhouse has been named Top Steakhouse in the Washington Magazine and best Porterhouse in DC in the Washingtonian.
Encon Group provided MEP and FP engineering services to this project. Unique challenges were addressed for a couple of scenarios. First the restaurant is in the corner of a circa 1970’s building in Washington, DC that possessed obstacles for kitchen hood exhaust, gas service and electrical utilities connections. The restaurant was spread out over two floors with minimal slab-to-slab elevations and large existing structural beams. This created tightly coordinated MEP drawings and construction challenges. MEP design consisted of gas fired boilers, grease interceptor, unique HVAC conditions, power and lighting specialties, along with the high end kitchen equipment.

The Firkin Group of Pubs is a full-service restaurant and pub serving lunch, dinner, brunch and late-night fare. Traditional Firkin Pubs average 3,000- 5,000 square feet. Non-traditional, smaller footprint pub prototypes are available for non-traditional sites like airports, universities, hotels, or sports arenas.
These projects dealt with tenant/landlord agreements, requirements and provisions. Each space had it’s own unique circumstances from airport authority guidelines to grease interceptors having to fit in tight areas outside of the building.
